Absolutely! version 1.2 introduced a filter called super_category_toggler.
Pass back an array of categories you want to toggle and the rest will be excluded
by default.

The plugin works as it says. I have a suggestion: can you add a functionality so that when users UNCHECK a parent category, all its child categories are UNCHECKED automatically?

… it also unchecks the parent category if you uncheck a child even if there are other childs of that parent that are still checked.
This seems like a bug to me.
